Slow Cooker Chronicles – Pepper Steak

 

 

Summary

This recipe makes about 8 servings and goes great with white rice

Ingredient Amount
Round Steak 1.5 lbs
Soy Sauce 1/4 cup
Onion 1
Minced garlic 1 clove
Sugar 1 tsp
Ground Ginger 1/4 tsp
Stewed tomatoes 15 oz can
Green Bell Peppers 2
Beef Bouillon cubes 1
Cornstarch 1 tbsp

 

Pre-Cook (10 minutes)

  1. Slice the Onion(s)
  2. Core, seed and julienne the bell peppers
  3. Combine the following in a bowl
    1. Soy Sauce
    2. Onion
    3. Garlic
    4. Sugar
    5. Ginger

Cooking (7 hours and 15 minutes)

  1. Slice beef in strips
  2. Brown strips in skillet (medium heat) with a little oil (about 15 minutes) and place in Slow Cooker
  3. Pour mixture above over beef
  4. Cover and cook on low for 5.5 hours
  5. Stir the following into Slow Cooker
    1. Bouillon cube
    2. Bell peppers
    3. Tomatoes
  6. Cover and cook for 1 hour
  7. Combine cornstarch and 1/4 cup water
  8. Stir into Slow Cooker
  9. Cover and cook for an additional 30 minutes (or until sauce thickens)
  10. Serve over rice
